APPLICATION — Use & Storage
1) Soaking: Shirred/cut pieces in cold water ~30 minutes.

3) Cooking: Steam or water cook to desired internal temperature.
4) Cooling: Prefer intermittent shower cycles (2 min on / 3 min off) until 115–118°F (46–48°C) core, or continuous shower ~20 minutes; avoid direct fan airflow immediately after cooking.
5) Storage: Cool gradually before refrigeration to avoid wrinkles; finished products may be frozen.
