Usage Instructions
|
1) Soaking: Soak shirred sticks or cut pieces in cold water ~30 min (per line SOP).
2) Stuffing: Tight fill (≈5–8% above nominal caliber). Use non-slip clips; avoid underfill.
3) Thermal/Smoke: Steam/boil/smoke to target core temp; casing supports even shrink and color uptake.
4) Cooling: Prefer controlled shower cooling; avoid immediate strong airflow post-cook to reduce wrinkling.
5) Peeling: Peel after full cooling/setting for a smooth surface; high-speed peel compatible.
6) Storage: Chill/freeze only after full cooling to maintain appearance.
